- Among them, the flavor sausage (Dazhong sausage) produced by Taiyu Meat Products Factory in Huangpu Town, Zhongshan City, sold by Shazaiwei Qiangzaiji Sausage Business Department in Pengjiang District, Jiangmen City (2024/03/08, 5 kg/box), with nitrite (calculated as sodium nitrite), has a test result of 41mg/kg, while the standard stipulates that it should not exceed 30mg/kg.
- It is understood that nitrite can not only scientifically and reasonably exert its entire coloring effect in food processing, but also avoid the growth and reproduction of botulinum toxin in food as much as possible. But if the content of nitrite in food is high, it may lead to hypoxia in human tissues; After ingesting nitrous acid, the human body can react to form strong carcinogenic nitrosamine compounds, which can induce cancer. Excessive nitrite can lead to poisoning. According to the National Food Safety Standard for the Use of Food Additives (GB 2760-2014), the maximum residual amount of nitrite (calculated as sodium nitrite) in cured meat products (such as salted meat, cured meat, salted duck, Chinese ham, and sausages) should not exceed 30mg/kg. The reason for the excessive nitrite content in cured meat products may be due to individual companies using excessive amounts during production and processing to improve the sensory properties of the products and increase their shelf life, or inaccurate measurement.
